Red Velvet Cookies Inspired By Tanya Burr

I have made these cookies three times now, the first time was just to see how delicious they were and trust me they lived up to the expectation of 'the best cookies', the second time I made them I gave some to my cousins and they absolutely loved them and the best part is, is that they are so quick to bake they literally take 9 to 11 minuets in the oven!
What you will need:
200g of butter
300g of caster sugar
1 large egg
560ml of self raising flour
75ml of cocoa powder
25ml of red dye
Large bar of milk chocolate (I tried cookies and cream)

For the icing (optional)
60g of cream cheese (softened)
30g of butter (softened)
1/2 a teaspoon of vanilla extract
1 cups of icing sugar mixture

Method
Preheat your oven to 200C. Put the butter and caster sugar into a mixing bowl and cream them together for a good 20 minuets. When its creamed crack the egg into the mixture and mix away until completely combined!
Mix together 310ml of self raising flour and 75 ml of cocoa powder, once combined gradually pour it in to the mixture. Add the red dye to the mixture (add extra red dye if needed).
Break up all of your chocolate and throw it in, using your hands to get it into the dough. By this point your hands are probably very messy, and what I have noticed is that the consistency is very very sticky for me so at this point I add 250ml of self raising flour to make the mixture less sticky and this way it seems to create more of a cookie dough when added.
Line 2 trays with baking paper (make sure you spread the cookies out, they expand quite a lot!).
Pick up eight handfuls of cookie dough and place four on each tray.
Pop them into the oven for 9 to 11 minuets, keep an eye on them near the 9 minuet mark as I have burnt these twice (although they still taste great!) But last time I listen to Tanya when she wrote "when you get them out they will not looked cooked, it is vital you know this" to be honest she is absolutely correct, they taste amazing when you don't think they are cook completely!
Leave the cookies out for 30 minuets (its a struggle to not eat them within that 30 minuets, but do not resist the urge!).
Once they are cool they are precisely the best cookies you will ever taste.
If you want to add a little bit of a spin to it, for the icing you will need a mixing bowl.
Mix the cream cheese and the butter together until combined.
Add the vanilla extract to the mixture and a cup of icing sugar, then mix away!
grab yourself a piping bag or you can just use a spoon and drizzle the icing over the top of the cookies, if they icing is not runny enough add a dash of milk to the mixture.
